About the Recipe
This cocktail shows its presence through its beautiful colour and foamy head. It’s a refreshing sip all around with the first intro to the pallet being a nice foamy texture from the egg whites and a crisp Kimino Ume Plum sparkling soda which is complemented very well with a White Rye Whiskey & Fino Sherry. As a sweet/sour balance I made a blackberry balsamic syrup and some lemon to tie it all together.

Ingredients
• 40ml White Rye
• 20ml Fino Sherry
• 22.5ml Blackberry balsamic syrup
• 22.5ml Lemon
• Egg whites
• Ume Plum sparkling soda
Preparation
Shake without ice. Add ice and shake hard. Grab a chilled glass and strain cocktail. Top with sparkling soda and garnish with dehydrated apple, fresh blackberry and dried flowers.
